Antes de mais nada, o Mocha é uma variação de café com leite. Inclusive, muitos o comparam bastante com o capuccino. Além disso, a definição de mocha está ligada a receita tradicional desse drink que é constituída basicamente de caramelo, leite cremoso e café espresso

 

1. Ingredientes

  • Café especial (20g)
  • Água quente (100ml)
  • Leite (100ml)
  • Doce de Leite (40g)

 –  TEMPO DE PREPARO

  • 10 Minutos

2. Iniciando

Primeiramente, acrescente os 40g de Doce de Leite, já no recipiente que você irá servir seu drink Mocha. Nivele e espalhe bem o doce no fundo do recipiente, preparando-o para receber o leite cremoso.

Atenção!  Sempre faça esse procedimento antes de coar o café. Isso porque enquanto o café está sendo filtrado, vai ocorrer a decantação no leite que será adicionado posteriormente, onde o maior percentual de líquido vai para o fundo do recipiente e a espuma para o topo. Dessa forma, o drink terá um degradê mais bonito e apresentável.

Dica: como a bebida é servida quente, o ideal é que o recipiente escolhido tenha um apoio, ou seja, uma alça. Dessa forma, você não corre o risco de queimar as mãos se o líquido estiver muito quente. Para essa receita, por exemplo, optamos pela taça conhecida como hot drink.

3. Preparando o Leite

Agora é o momento de preparar o leite cremoso. Já sabe como vai fazer o seu ?

Importante! A temperatura ideal para que seu drink tenha uma boa harmonização com o café não pode ultrapassar 70ºC.

Dica: caso você não tenha um termômetro para medir a temperatura do leite, de forma geral, quando ele se aproxima da fervura, significa que ele está no ponto ideal. Ah! Você também pode usar outros tipos de leites, tá ?

4. Adicionando o Leite

Em seguida, acrescente o leite sob o doce de leite, deixando espaço para receber o café.

5. Proporção do Café

Posteriormente, filtre o café na proporção que recomendamos. Utilizando os 20g de café para 100g de água.

Lembrando que, na receita tradicional, utiliza-se café espresso. Por essa razão estamos fazendo uma proporção mais concentrada. Por isso é tão importante considerar os aspectos da moagem e entender sobre proporções. Afinal, o sabor do café precisa se destacar no drink.

5. Adicionando o Café

Finalmente, de forma lenta adicione o café. Dessa forma você conseguirá trazer um efeito de degradê à bebida.

Dica: com o próprio café, enquanto faz o arremesso, você pode usar a criatividade e fazer algum tipo de desenho sob a espuma do leite. Você pode utilizar o auxílio de algum instrumento, como um palito ou qualquer outro, para facilitar e deixar seu drink ainda mais apresentável.

O nome Mocha deu-se por causa de uma cidade  do Yêmen que fica na costa do Mar Vermelho. Nesse sentido, a cidade é, desde o século XV, uma grande exportadora de café e se destaca na produção de grãos com notas achocolatadas. É por este motivo que o café misturado ao chocolate foi chamado café mocha.
